Cohobé Single Malt Whisky

The verb “Cohober” comes from old French. It means to “redistill, concentrate aromas” to obtain a more pure and delicious eau-de-vie. The word appeared at the beginning of the eighteenth century when successive distillation techniques were developed in new pot stills named alembics, particularly in the Cognac region of France where our whisky is produced.

A high-quality French barley

There is no great whisky without a good grain at the start. For Cohobé, we work with the best cereal growers, not far from the Cognac region, where we make our whisky. France has always been a land of cereals: the Gauls perfectly mastered the cultivation of barley. In this, Cohobé is the centuries-old heritage of the art of French grain. Malting is also carried out in France, as is the entire Cohobé production.

The art of double distillation

Like Cognac, Cohobé whisky is a product of double distillation in a small alambic or still. It’s an imperative condition to guarantee the highest quality. After the first pass-through, the brouilli (or the first distillation) of Cohobé, is passed through the alambic again to obtain a perfect concentration of aromas. But that is not enough to obtain a great whisky: one still has to carefully select which part of the brouilli will be redistilled. In the case of Cohobé, depending on the desired eau-de-vie profile, we vary this selection while constantly searching for the best quality, even if it means keeping only a small part of what was initially distilled.

The Subtle Art of Heating and Aging

In Cohobé, all is natural. Barley and oak wood are the products of their original land. The choice of wood and the type of heating are essential elements for the elaboration of Cohobé to reveal all the qualities of the grain. Only cutting-edge craftsmanship can give birth to a whisky such as Cohobé. Our aging literally elevates Cohobé whisky as it gradually reveals all of its qualities, but the right conditions still need to be combined for this.

The type of wood and the type of heating will ideally correspond with the distillation profile in a subtle and delicate balance. We use small French oak barrels (250 or 350 liters) for better contact between the eau-de-vie and the wood. Nothing is ever industrial or standardized in Cohobé. Our whisky is a product of the inspiration and work of men and their ability to adapt their art to what the land offers them.

The purity of the bottle is inspired by ancient alambics. If the shape of the carafe is reminiscent of that of the first stills, it is not simply to make a nod to history, but above all to embody our approach to concentrating aromas towards ever greater finesse. The increasingly finer streaks going towards the top of the carafe symbolize the distiller’s ideal: moving towards the purest expression of whisky.

Cohobé Élévation

“Élévation” is a very delicate whisky. Connoisseurs would call it “straight” or “tight”. Austere at first, it gradually reveals notes - each more delicate than the other - in a play of flavors full of subtlety.

To achieve this “elevation” we took complicated paths in the distillation and the choice of wood (French oak), but the result is a unique whisky that gives pride of place to the grain, which offers a thousand aromatic nuances.

EYE

Gold blonde. Clear and shiny.

NOSE

Élévation offers a remarkable and slightly mineral finesse. Delicate malty notes are ex-pressed followed by more floral notes (rosehip, narcissus) immediately relayed by delicate fruity accents and spicy notes.

TASTE

Élévation swirls in the mouth in a harmony of aromas and great finesse. The tannins are silky, and the texture is light, but the flavors are frank and very present around slightly spicy floral notes like pollen, and with a long and delicious finish.

Élévation evokes everything we look for in a whisky: tension, a subtle aromatic play, all in balance like a tightrope walker of flavors. There you can enjoy hot grains, flowers, and fresh fruits. It’s an ode to naturalness.


Cohobé Libération

“Libération” is the ultimate generous whisky. A precise redistillation technique, combined with “tailor-made” aging, produces a rounded whisky that finds its full expression after aging in fine-grained French oak barrels.

The name “Libération” designates the ability to fully express all the aromas of barley grain and oak wood in perfect harmony. It is a gourmet whisky, with rich and generous aromas, dazzling with nuances for the greatest pleasure of whisky enthusiasts

NOSE

Libération reveals a beautiful complexity and a remarkable balance. Woody and mineral notes harmonize together and gradually reveal rich floral, fruity, and spicy scents, punctuated with roasted and balsamic notes.

TASTE

Libération is distinguished by a complex richness, a beautiful opulence where generous notes with fruity tones dominate.

The accord is well structured by the wood - in a very controlled way - offering a powerful, supple, and persistent finish.

Libération in turn evokes fields of cereals heated by the sun, subtle pastries, and candied fruits but also more autumnal and spicy notes. A superb tasting experience.
